If using jarred grape leaves: drain and rinse leaves under cool water to remove brine; gently pat dry. Separate into individual leaves and trim any tough stems. If using fresh leaves: bring 2 cups water to a simmer in a shallow pot, add leaves in batches and blanch 30–60 seconds until pliable; drain and pat dry.

Lay each leaf flat, vein-side up, with the stem end toward you. If leaves are large, trim any thick central stem end to make rolling easier.

Sweat the onion

Heat 1 tablespoon olive oil in a small skillet over medium heat. Add the finely minced onion and a pinch of salt; cook 3–4 minutes until translucent and softened but not browned.

Combine rice and aromatics

Add 1/2 cup uncooked rice to the skillet with the onion and stir for 1 minute to coat the rice in oil. Stir in 1 teaspoon tomato paste, 1 teaspoon pine nuts (if using), 2 tablespoons chopped parsley, 1 tablespoon chopped mint, 1 teaspoon chopped dill (optional), 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/8 teaspoon ground cinnamon.

Partially cook the rice

Pour 1/4 cup water into the skillet, bring to a gentle simmer, cover, and cook for 8–10 minutes until rice is partially tender but still has bite (about 60–70% cooked). Remove from heat and let the mixture cool to room temperature before stuffing (prevents leaves from getting soggy and keeps rolls compact). Taste and adjust seasoning if needed.

Assembling and rolling

Place one grape leaf flat with the stem end toward you. Spoon about 2–2.5 tablespoons of the cooled filling onto the center near the stem end (enough so final count yields 5 pieces). Keep filling level narrow and centered to allow neat rolling.

Fold the bottom (stem) edge up over the filling, then fold both sides inward snugly, and roll away from you into a tight cylinder. Tuck in edges as needed to keep a compact seam. Place each finished dolma seam-side down in a small, heavy-bottomed saucepan or small pot.

Repeat until you have 5 rolled grape leaves. Arrange them snugly in one layer (or slightly overlapping) so they support each other during cooking.

Cooking and finishing

Pour 1/2 cup water or low-sodium vegetable broth and 1 tablespoon olive oil over the arranged dolmas. Drizzle 1/2 cup lemon juice or arrange thin lemon slices on top to add brightness and prevent discoloration. Place a small heatproof plate or lid slightly smaller than the pot on top of the dolmas to keep them weighed down and prevent unrolling.

Cover the pot and bring to a gentle simmer over low heat. Cook for 30–40 minutes until rice inside is fully tender. Avoid a rolling boil; maintain a gentle simmer to keep rolls intact.

When done, remove from heat and let the dolmas rest, covered, for 10 minutes. Transfer to a serving plate. Serve warm or at room temperature with extra lemon wedges and a drizzle of olive oil or plain yogurt if desired.
