Prepare Chickpeas (optional smoother texture)

For extra-smooth hummus: transfer the drained chickpeas to a medium saucepan, cover with water, bring to a gentle simmer and cook 10 minutes. Drain, then optionally pinch skins off individual chickpeas or rub between towels to remove loose skins. Discard skins and proceed. If short on time, skip this step and use chickpeas straight from the can (still rinse and drain).
Blend Base
Add the peeled/simmered or drained chickpeas, garlic cloves, olive oil (2 tbs), cold water (2 tbs), salt, cumin (if using) and black pepper to the whipped tahini. Process on high until mixture becomes smooth, stopping to scrape down the sides every 20–30 seconds. Total blending time about 1–3 minutes depending on equipment.
If the hummus is too thick or grainy, add additional cold water 1 tablespoon at a time and pulse until you reach a creamy, spreadable consistency. Taste and adjust salt, lemon, or cumin as needed.
Finish & Serve
Spoon the hummus into a shallow bowl and use the back of the spoon to create a slight well in the center. Drizzle 1 tablespoon extra-virgin olive oil over the top. Sprinkle smoked paprika or sumac and chopped parsley if using, and scatter the optional whole chickpeas for texture.
Storage
Store leftover hummus in an airtight container in the refrigerator for up to 4–5 days. Cover the surface with a thin film of olive oil to help preserve freshness. Bring to room temperature and stir before serving.
