Preparation and Cooking

Cook the Rice

In a medium pot, bring 2 cups of water to a boil. Add the uncooked white rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Prepare the Ground Beef

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Add Marinara and Seasoning

Once the beef is browned, drain any excess fat. Add the marinara sauce and Greek seasoning to the skillet. Stir well to combine and let it simmer for about 5 minutes.

Prepare the Bell Peppers

While the beef is simmering, cut the tops off the bell peppers and remove the seeds. You can dice the tops and add them to the beef mixture if desired.

Combine Ingredients

In a large bowl, mix the cooked rice with the beef and marinara mixture until well combined.

Prepare the Greek Salad

In a separate bowl, combine the diced cucumber, diced tomatoes, crumbled feta cheese, and Kalamata olives. Drizzle with olive oil and red wine vinegar, then season with salt and black pepper to taste. Toss gently to mix.

Serve

To serve, spoon the rice and beef mixture into bowls or plates. Top with the Greek salad on the side. Enjoy your YEMISTA!
