Prep steak

Remove steak from refrigerator 20–30 minutes before cooking to come closer to room temperature. Pat dry with paper towels. Season both sides evenly with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper.

Sear steak

Heat a large skillet (preferably cast-iron) over medium-high heat until very hot. Add 1 tablespoon olive oil and 1 tablespoon unsalted butter. When butter stops foaming, add the steak. Sear without moving for 3–4 minutes until a deep brown crust forms. Flip and cook another 3–4 minutes for medium-rare (internal temp ~130–135°F / 54–57°C). Adjust time for desired doneness. Transfer steak to a cutting board, tent loosely with foil and let rest 5–8 minutes.

Slice steak

After resting, slice steak thinly against the grain into bite-size strips for easier eating with shrimp and sauce.

Season shrimp

Pat shrimp dry with paper towels. Toss with 1 tsp olive oil, 1/2 tsp kosher salt, 1/4 tsp black pepper and 1/2 tsp garlic powder until evenly coated.

Cook shrimp

In the same skillet used for steak (wipe out excess residue but leave browned fond), add 1 tablespoon olive oil over medium-high heat. Add shrimp in a single layer and cook 1.5–2 minutes per side until pink and just opaque. Remove shrimp to a plate and set aside. Do not overcook; they will finish in the sauce briefly.

Mix sauce slurry

In a small bowl, whisk together 2 tablespoons water and 1 teaspoon cornstarch until smooth; set aside.

Make sauce

Reduce heat to medium. Add the minced garlic and grated ginger to the hot skillet with a small splash of oil if pan is dry; cook 20–30 seconds until fragrant but not browned. Add 1/4 cup honey, 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1/2 teaspoon sesame oil (if using) and 1/4 tsp red pepper flakes (optional). Stir and bring mixture to a gentle simmer.

Thicken sauce

Whisk the cornstarch slurry again briefly, then pour into the simmering sauce while stirring. Continue to simmer 1–2 minutes until sauce thickens to a glossy coat. Taste and adjust: add a splash more soy for salt, more honey for sweetness, or a squeeze of lemon for brightness.

Combine shrimp with sauce

Return cooked shrimp to the skillet and toss to coat in the sauce. Cook together 30–60 seconds just to reheat shrimp and marry flavors.

Assembly & Finish

Plate steak and shrimp

Arrange sliced steak on a serving platter or individual plates. Spoon honey garlic shrimp and sauce over and around the steak, ensuring shrimp and sauce are evenly distributed.

Add cheese and garnish

While the sauce is hot, sprinkle 1/2 cup shredded cheddar cheese over the steak and shrimp so it softens and melts slightly from residual heat. Garnish with chopped parsley or green onion. Serve with lemon wedges on the side to squeeze over if desired.

Serve immediately while hot. Recommended sides: steamed rice, roasted vegetables, or garlic mashed potatoes to complement the sweet-savory sauce.
