Prepare proteins

Pat shrimp dry with paper towels. Trim any tails if desired. Pound chicken breasts to an even thickness (about 1/2 inch) for even cooking. Season both shrimp and chicken on both sides with 1 tsp salt, 1 tsp black pepper, and 1 tsp garlic powder (divide evenly).

Cook shrimp

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. When shimmering, add shrimp in a single layer and cook 1-2 minutes per side until pink and opaque. Remove shrimp from pan and keep warm.

Choose chicken method

Option A - Grilled: Brush chicken with 1 tablespoon olive oil and grill over medium-high heat (or use grill pan) 4-6 minutes per side until internal temperature reaches 165°F (74°C). Rest 5 minutes, then slice. Option B - Fried: Set up breading station — whisk egg and milk together. Combine flour, cornstarch, paprika, and onion powder in a bowl. Dip chicken into egg mixture, then dredge in the flour mixture pressing to adhere. Heat vegetable oil in a skillet to 350°F (175°C) and fry chicken 3-5 minutes per side until golden and cooked through (internal 165°F/74°C). Drain on paper towels and slice.

While proteins cook, make the Hello sauce: In a small bowl combine 1 tablespoon mayonnaise, 1 tablespoon ketchup, 1 teaspoon hot sauce, 1 teaspoon lemon juice, 1 teaspoon sweet pickle relish (if using), 1 teaspoon smoked paprika, 1/4 teaspoon salt and 1/8 teaspoon black pepper. Whisk until smooth and taste-adjust: add more hot sauce for heat or lemon for brightness. Refrigerate until assembly.

Preheat oven broiler or a toaster oven to high. If assembling on buns or open-faced, place sliced chicken (or grilled chicken halves) on baking sheet or buns, top with cooked shrimp, and sprinkle 1 cup shredded sharp cheddar evenly over the top. Broil 1-2 minutes until cheese melts and begins to brown — watch carefully to avoid burning.

Alternatively, for rice or bowls: place sliced chicken and shrimp over cooked rice, drizzle with Hello sauce and sprinkle cheddar cheese; the residual heat will melt some cheese.

Garnish with chopped parsley and serve with lemon wedges. Offer optional lettuce and tomato on buns if assembling sandwiches.
