Method

Protein & main

1

Prepare chicken

If chicken breasts are thick, butterfly them or pound to 1/2" thickness between plastic wrap for even cooking. Pat dry with paper towels and season both sides lightly with 1/2 tsp salt and 1/4 tsp black pepper (from marinade section amounts).

2

Cook bacon

In a large skillet over medium heat, add bacon strips in a single layer. Cook until crisp, turning occasionally, about 8–10 minutes. Transfer to a paper-towel-lined plate to drain, then roughly chop when cool. Reserve 1–2 tablespoons of rendered bacon fat; discard the rest or save for another use.

Marinade / coating (for fried or grilled option)

3

Set up breading station

Place flour in a shallow dish. In a second dish, whisk eggs with milk. In a third dish, combine breadcrumbs, 1 tsp garlic powder, remaining 1/2 tsp salt, 1/4 tsp black pepper and 1/2 cup grated Parmesan (from main cheese).

4

Bread or prepare for grill

For fried chicken: Dredge each seasoned chicken breast in flour, shaking off excess, then dip in egg mixture, then press into breadcrumb mixture to coat thoroughly. For grilled chicken: lightly brush both sides of the seasoned chicken with 1 tbs olive oil and a thin sprinkle of the breadcrumb-Parmesan mix (optional for texture).

5

Cook chicken — Fried option

Heat 1/2 cup vegetable oil with 1 tbs reserved bacon fat (if using) in a large skillet over medium-high heat until shimmering (about 350°F if using a thermometer). Add breaded chicken and cook 3–4 minutes per side until golden brown and internal temperature reaches 165°F. Transfer to a wire rack set over a baking sheet and tent loosely with foil to keep warm.

6

Cook chicken — Grilled option

Preheat grill or grill pan to medium-high. Brush grates with oil. Grill chicken 5–7 minutes per side (depending on thickness) until grill marks form and internal temperature reaches 165°F. During last 1–2 minutes, sprinkle remaining grated Parmesan on top to melt slightly. Transfer to a plate and rest 5 minutes.

Lemon Garlic Parmesan Sauce

7

Make the sauce

In a medium skillet over medium heat, melt 3 tbs butter with 1 tbs olive oil. Add minced garlic and cook 30–45 seconds until fragrant but not browned. Add chicken broth and scrape any browned bits from the pan; simmer 1–2 minutes to reduce slightly. Stir in lemon juice and lemon zest, then add heavy cream and bring to a gentle simmer, stirring.

8

Whisk in 3/4 cup finely grated Parmesan a little at a time until melted and the sauce is smooth. Season with 1/4 tsp black pepper, 1/4 tsp red pepper flakes, and 1/2 tsp salt (adjust to taste). If sauce is too thick, thin with up to 2 tbs additional chicken broth or water. Stir in 2 tbs chopped fresh parsley and remove from heat.

9

Taste and adjust: add more lemon for brightness, more Parmesan for nuttiness, or a pinch of sugar if it tastes too sharp.

To finish & serve

10

Assemble: Place each cooked chicken breast on a serving plate. Spoon generous amounts of the lemon garlic Parmesan sauce over each piece. Scatter chopped crisp bacon over the top and sprinkle with extra grated Parmesan and remaining chopped parsley.

11

Optional: Garnish with a lemon slice alongside each portion. Serve immediately with your choice of sides (pasta, roasted vegetables, or salad).
