Prepare and roast potatoes

Preheat oven to 425°F (220°C). Toss halved baby potatoes with 2 tbs olive oil, 1 tsp salt, 1 tsp black pepper and 1 tsp smoked paprika in a large bowl until evenly coated. Spread potatoes cut-side down on a rimmed baking sheet in a single layer. Roast for 25–30 minutes, turning once halfway, until golden-brown and fork-tender. Remove from oven and keep warm. If using a cast-iron or ovenproof skillet for the final assembly, you can roast directly in that skillet.

Marinate and season chicken

In a medium bowl, combine 1 tbs buttermilk, 2 tbs hot sauce and 3 tbs ranch dressing. Add 1 lb cut chicken pieces and toss to coat. Sprinkle in 1 tbs cornstarch, 1 tsp garlic powder, 1 tsp onion powder, 0.5 tsp salt and 0.5 tsp black pepper, then toss again until evenly coated. Let sit 10 minutes while potatoes roast; the cornstarch will help the exterior crisp.

Cook chicken

Heat 2 tbs neutral oil in a large skillet over medium-high heat until shimmering. Add the marinated chicken in a single layer (work in batches if necessary to avoid crowding). Sear without moving for 2–3 minutes to develop color, then stir and continue cooking 2–3 more minutes until cooked through and internal temperature reaches 165°F (74°C). Remove from heat and transfer chicken to a bowl. Deglaze pan with a splash (about 1 tbs) of water if there are sticky browned bits, scraping them up and mixing into the chicken for extra flavor.

Toss chicken in buffalo-ranch glaze

Add an additional 1–2 tbs hot sauce and 1 tbs ranch to the cooked chicken and toss to coat. Taste and adjust — add more hot sauce for heat or ranch for creaminess. If you prefer a saucier topping, warm 1–2 tbs unsalted butter in the pan and stir into the sauce before tossing the chicken.

Assemble the loaded pot

If using a skillet, place the roasted potatoes back in the warm skillet (or use the baking sheet). Scatter the shredded cheddar evenly over the potatoes. Top with the buffalo-ranch chicken, distributing pieces across the potatoes. If using optional corn or jalapeños, sprinkle them now.

Melt cheese and finish

Return the skillet to the oven at 425°F (220°C) for 3–5 minutes, or place under a preheated broiler 1–2 minutes, just until the cheese is melted and bubbling—watch closely to avoid burning. Remove from oven.

Garnish and serve

Sprinkle crumbled blue cheese (if using) and chopped scallions over the hot dish. Drizzle ranch dressing (2 tbs) and 1 tbs extra hot sauce over the top as desired. Finish with chopped cilantro or parsley if using. Serve hot family-style straight from the skillet or transfer to a platter.

To make ahead: roast potatoes and cook chicken separately, then refrigerate. Reheat together in a 375°F (190°C) oven until warmed through, then add cheese and broil briefly. For a lighter version use Greek yogurt-based ranch and grill the chicken instead of pan-frying.
