Cook fries

Preheat oven to 425°F (220°C) or preheat air fryer to 400°F (200°C). Toss the frozen fries with 2 tbs vegetable oil, 1 tsp salt and 1/2 tsp black pepper. Spread in a single layer on a baking sheet (or in the air fryer basket). Bake for 18–25 minutes, flipping once halfway through, until golden and crisp. If frying: heat 1/2 inch oil in a skillet to 350°F and fry in batches 3–4 minutes until crisp; drain on paper towels and season immediately.

Keep fries warm on the baking sheet in a low oven (200°F/95°C) while you make sauce and toppings.

Make sauce

In a small bowl combine 3 tbs mayonnaise, 1 tbs ketchup, 1 tsp hot sauce, 1/2 tsp yellow mustard, 1/2 tsp apple cider vinegar and 1/4 tsp smoked paprika. Whisk until smooth and season with 1/8 tsp salt. Taste and adjust heat or acidity to preference (add more hot sauce or ketchup). Refrigerate or hold at room temperature until serving.

Prepare bacon

If bacon isn't pre-cooked, fry or bake 3 strips until crisp: bake on a foil-lined sheet at 400°F (200°C) for 12–18 minutes or fry in a skillet 6–8 minutes, turning as needed. Drain on paper towels and chop into bite-sized pieces.

Cook eggs

For runny yolks: heat a nonstick skillet over medium-low with a little oil or butter. Crack 2 eggs into the pan and cook until whites are set but yolks are still soft, about 3–4 minutes for sunny-side up. For over-easy: cook 2–3 minutes then flip and cook 20–30 seconds more. Season with 1/8 tsp salt and a pinch of black pepper.

If you prefer scrambled: whisk eggs, salt and pepper, then cook over medium-low stirring frequently until just set (about 2–3 minutes).

Assemble cheese and bacon

Remove the warm fries from the oven. Sprinkle 1 cup shredded cheddar evenly over the fries, then scatter the chopped bacon on top. Return to the oven for 2–4 minutes until cheese melts (or place under broiler for 30–60 seconds watching closely).

Top melted cheesy fries with the cooked eggs. Drizzle 2–3 tbs of Hello Sauce over the fries and eggs, garnish with sliced chives/green onions and finish with a crack of black pepper.

Optional Add-ons

Add any optional items you like after assembly: scatter jalapeño slices for heat, spoon diced avocado or pico de gallo for freshness, or add extra hot sauce to taste.
