Method
Shrimp & Marinade
Prep Shrimp
Pat shrimp dry with paper towels and place in a medium bowl.
Add olive oil, smoked paprika, garlic powder, onion powder, kosher salt, black pepper and lemon juice to the bowl with shrimp. Toss until evenly coated. Let marinate 10–15 minutes while you prepare other components.
BBQ Ranch Sauce
In a small bowl, whisk together ranch dressing and BBQ sauce until smooth. Stir in honey (or maple syrup) and optional hot sauce. Taste and adjust: add a pinch of salt or more BBQ for sweetness/smoke. Keep chilled or at room temperature.
If you reserved any warm pan juices from cooking shrimp, whisk a teaspoon into the sauce to warm and marry flavors (optional).
Bacon & Cheese
Cook bacon until crisp using your preferred method (pan-fry, bake on sheet at 400°F/200°C for 12–15 minutes, or microwave). Drain on paper towels, then chop into 1/2-inch pieces.
Shred cheddar if not pre-shredded and keep ready to sprinkle over fries.
Fries & Assembly
Cook fries according to package instructions or your preferred method: bake at 425°F (220°C) for 18–25 minutes, flipping once, or deep-fry at 350°F (175°C) until golden and crisp (about 3–5 minutes). If oven-baking, toss fries with 2 tbs vegetable oil and a pinch of salt before baking.
Place hot fries on a serving platter or individual plates. Immediately sprinkle shredded cheddar evenly over the fries so it begins to melt. If you want fully melted cheese, place fries under a broiler for 1–2 minutes—watch closely to avoid burning.
Top the cheesy fries with cooked shrimp, then scatter chopped bacon pieces across the top.
Serve immediately while hot and crispy. Offer extra BBQ Ranch on the side for dipping.
