Baked Potatoes
Prep and Bake Potatoes
Preheat oven to 425°F (220°C). Scrub russet potatoes and pat dry. Prick each potato several times with a fork, rub with 2 tbs olive oil, and sprinkle with 1 tsp coarse salt and 1/2 tsp black pepper. Place directly on an oven rack or on a rimmed baking sheet and bake 45–60 minutes, until skins are crisp and a knife slides in easily. Remove from oven and let cool slightly.
Hollow and Mash Potatoes
When potatoes are cool enough to handle, slice each lengthwise across the top and scoop out most of the flesh into a bowl, leaving a 1/4-inch shell. Add 4 tbs unsalted butter, 1/2 tsp salt, and 1/4 tsp black pepper to the potato flesh and mash until creamy but slightly chunky. Adjust seasoning to taste. Return the filling to the potato shells, piling slightly higher for a loaded look.
Crisp Shells (optional)
For crispier shells, place filled shells back on a baking sheet and bake at 400°F (200°C) for 10 minutes, just to heat through and set.
Chicken (fried or grilled)
Prepare Chicken
If using breasts, halve horizontally to make 4 thinner cutlets or pound to 1/2-inch thickness. If time allows, marinate chicken in 1 cup buttermilk for 30 minutes to 2 hours for extra tenderness (optional). Pat chicken dry before coating or grilling.
Fried Chicken Option
Combine 1 cup all-purpose flour, 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tsp onion powder, 1 tsp salt, and 1/2 tsp black pepper in a shallow dish. Heat 1 cup vegetable oil in a large skillet over medium-high heat until shimmering (about 350°F if using a thermometer). Dredge each chicken piece in the seasoned flour, shaking off excess. Fry chicken 3–5 minutes per side depending on thickness, until golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack or paper towels to drain and rest 5 minutes. Slice into bite-size strips.
Grilled Chicken Option
Preheat grill or grill pan to medium-high. Brush chicken lightly with 1 tbs olive oil and season with 1/2 tsp salt and a pinch of black pepper. Grill 4–6 minutes per side depending on thickness, until grill marks form and internal temperature reaches 165°F (74°C). Let rest 5 minutes and slice into strips.
Toppings & Sauce
Cook Bacon
In a skillet over medium heat, cook 6 slices bacon until crisp, about 6–10 minutes, turning as needed. Remove and drain on paper towels, then chop into bite-size pieces.
Make BBQ Ranch Sauce
In a small bowl combine 1/2 cup BBQ sauce, 1/4 cup ranch dressing, 1/2 cup sour cream, 1/4 cup mayonnaise, 1 tsp apple cider vinegar and 1/4 tsp hot sauce. Whisk until smooth and taste; adjust sweetness or heat as desired. This yields a creamy BBQ-ranch drizzle for the potatoes.
Assemble and Melt Cheese
Preheat broiler to high (or oven to 400°F/200°C). Place the filled potato shells on a baking sheet. Top each potato with a generous sprinkle of shredded cheddar (about 1/2 cup per potato). Bake under broiler or in oven 2–4 minutes until cheese is melted and bubbly—watch closely to avoid burning.
Finish and Serve
Top each cheesy potato with sliced fried or grilled chicken, then scatter chopped bacon and 1 tsp sliced green onions per potato. Drizzle about 2 tbs BBQ ranch sauce over each potato (or to taste). Garnish with remaining green onions and optional fresh chives or parsley. Serve immediately.
