Prepare and season

Pat chicken breasts dry with paper towels. If breasts are thick, butterfly or pound to an even 3/4 inch thickness. Season both sides evenly with salt, black pepper, garlic powder, and paprika.

Choose cooking method

Decide whether to fry or grill. For frying: set up a dredge station with flour in one shallow dish and beaten eggs mixed with 1 tablespoon milk in another. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. For grilling: preheat grill or grill pan to medium-high and brush chicken lightly with 1 tablespoon olive oil.

Frying instructions (optional)

If frying, dredge each seasoned breast first in flour, then dip into the egg mixture, then again briefly in flour for a light crust. Shake off excess. Add remaining 2 tablespoons oil to the skillet and fry chicken 4–5 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a paper towel-lined plate and rest 3 minutes.

Grilling instructions (optional)

If grilling, place oiled seasoned breasts on the hot grill. Cook 5–7 minutes per side, flipping once, until internal temperature reaches 165°F (74°C) and juices run clear. Remove from grill and rest 3 minutes.

BBQ & Ranch Toppings/Sauces

While chicken rests, combine 3 tablespoons BBQ sauce and 3 tablespoons ranch dressing in a small bowl. If you prefer a creamier ranch-BBQ blend, whisk in 1 tablespoon mayonnaise and 1 teaspoon lime juice. Taste and adjust ratios to preference. Keep warm or room temperature until assembly.

If you want separate sauces instead of combined, warm the BBQ sauce gently in a small saucepan or microwave and serve ranch chilled or room temperature.

Cheese & Bacon

Cook the bacon: place bacon slices in a cold skillet and turn heat to medium. Cook, turning occasionally, until crisp, about 8–10 minutes. Drain on paper towels and then chop or crumble into bite-sized pieces.

Melt cheese on chicken: preheat oven broiler or use a covered skillet. Place rested cooked chicken on a baking sheet. Brush each breast lightly with the prepared BBQ-ranch sauce (or plain BBQ if serving sauces separately). Sprinkle about 1/4 cup shredded cheddar per breast (total 1 cup across 4 breasts). Place under the broiler 1–2 minutes until cheese melts and bubbles (watch carefully) OR cover skillet and cook over low for 1–2 minutes until cheese melts.

Top with crumbled bacon immediately after cheese melts so the bacon adheres to the cheese.

Garnish & Serving

Plate the chicken breasts. Spoon any remaining BBQ-ranch sauce over the top or serve extra on the side. Scatter sliced green onions and chopped parsley over each breast and add a lemon or lime wedge on the side for brightness.

Serve hot with choice of sides (mashed potatoes, fries, salad, or steamed vegetables). Leftovers can be refrigerated in an airtight container for up to 3 days.
