1. Prepare the Vegetables
Heat oil in a large skillet over medium heat. Add the chopped onion, diced potatoes, and sliced carrots. Sauté for about 5-7 minutes until the vegetables begin to soften.
2. Add the Curry Paste
Stir in the Massaman curry paste and cook for another 2 minutes until fragrant.
3. Combine Coconut Milk and Seasonings
Pour in the coconut milk and add fish sauce, brown sugar, and lime juice. Stir well to combine. Bring the mixture to a simmer.
4. Cook the Salmon
Gently place the salmon fillets into the skillet, skin side down. Cover and let it simmer for about 10-12 minutes until the salmon is cooked through and flakes easily with a fork.
