Prepare the French Toast

In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined. Dip each slice of bread into the egg mixture, ensuring both sides are coated.

Cook the French Toast

In a skillet over medium heat, melt 1 tablespoon of butter. Add the coated bread slices and cook until golden brown on both sides, about 3-4 minutes per side. Remove from the skillet and keep warm.

Make the Bananas Foster Sauce

In the same skillet, melt the remaining tablespoon of butter. Add the sliced bananas and cook for 1-2 minutes until they start to soften. Sprinkle the brown sugar over the bananas and stir gently to combine. Cook for an additional 2-3 minutes until the sugar has dissolved and the mixture is bubbly.

Flambé the Sauce (Optional)

If desired, carefully add the dark rum to the pan and use a long lighter or match to ignite the rum. Allow the flames to subside as the alcohol burns off.

To serve, place the French toast on a plate and spoon the warm bananas foster sauce over the top. Add whipped cream if desired.
