Prepare shrimp

If shrimp are frozen, thaw fully in the refrigerator or under cold running water and pat dry with paper towels. If tails are on and you prefer them off, remove tails; leaving tails on is fine for presentation.

Make marinade

In a medium bowl combine 3 tbs olive oil, 2 tbs fresh lemon juice, minced garlic, smoked paprika, ground cumin, kosher salt, black pepper and red pepper flakes (if using). Whisk until evenly combined.

Marinate

Add the shrimp to the bowl and toss to coat thoroughly. Cover and refrigerate for 15–30 minutes (no longer than 1 hour to avoid 'cooking' the shrimp in acid). If using wooden skewers, soak them in water for at least 30 minutes prior to grilling.

Grilling & Finish

Preheat grill

Preheat a gas or charcoal grill to medium-high heat (about 400–450°F / 200–230°C). Oil the grates lightly to prevent sticking or brush the shrimp with a bit of oil just before placing on grill.

Skewer shrimp

Thread 3 shrimp per skewer (for 6 skewers) or grill shrimp directly in a single layer on a basket or tray. Leave a small gap between shrimp so heat circulates and they cook evenly.

Grill shrimp

Place skewers on the hot grill and cook 1.5–2 minutes per side, flipping once, until shrimp are opaque and firm with a slight char. Total grilling time should be 3–4 minutes depending on shrimp size — avoid overcooking.

Finish & serve

If using, brush the grilled shrimp lightly with 1 tbs melted butter and sprinkle with chopped fresh parsley. Transfer to a serving plate, garnish with lemon wedges, and serve immediately.
