Oysters
Drain the shucked oysters in a fine-mesh sieve over a bowl for 10–15 minutes to remove excess liquid. Pat lightly with paper towels to remove surface moisture. Season gently with 1 tsp kosher salt, 1 tsp freshly ground black pepper and 1 tsp hot sauce if using; toss gently to combine.
Breading station
Set up three shallow dishes: one for the dry flour mix, one for the wet egg wash, and one for an optional extra coating. In the first dish combine 3 tbs all-purpose flour, 2 tbs cornstarch, 2 tbs fine cornmeal, 1 tbs breadcrumbs (if using), 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1/4 tsp cayenne, 1/2 tsp black pepper and 1/2 tsp kosher salt. Whisk thoroughly so seasonings are evenly distributed.
In the second dish whisk 2 large eggs with 1/2 cup whole milk (or buttermilk) and 1/2 tsp Worcestershire sauce until smooth.
If you want an extra-crispy triple-coat, leave the third dish with 1–2 tbs extra flour or panko for a final dredge.
Working in small batches (4–6 oysters at a time), dredge each oyster first in the dry flour mixture, shaking off excess, then dip into the egg wash letting excess drip back, then return to the flour mix and press lightly so the coating adheres. Place breaded oysters on a wire rack set over a sheet pan to rest for 10 minutes — resting helps the coating set and reduces loss during frying.
Frying
Pour 2 cups of neutral frying oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1 to 1.5 inches. Heat over medium-high heat until the oil reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a small pinch of breading into the oil — it should sizzle and brown within 30–45 seconds.
Fry the oysters in a single layer in batches, careful not to crowd the pan. Cook 1–1.5 minutes per side until golden brown and crisp. Use a slotted spoon or spider to transfer oysters to a paper towel–lined tray to drain. Maintain oil temperature between 325–350°F: let the oil come back up to temperature between batches to ensure even cooking.
If you used a thicker coating or larger oysters, cook a little longer (up to 2 minutes per side) but avoid overcooking, which toughens oysters.
To serve
Leftover fried oysters are best eaten the same day. Reheat on a wire rack in a 375°F (190°C) oven for 6–8 minutes to regain crispness.
