Lavender Simple Syrup

    Make syrup

    Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Add 1 tablespoon dried culinary lavender. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Reduce heat and simmer for 2 minutes to infuse the lavender, then remove from heat.

    Let the syrup steep with the lavender for 10–15 minutes off the heat for a pronounced floral note, then strain through a fine mesh sieve or cheesecloth into a clean jar. Cool to room temperature, then refrigerate. Syrup keeps up to 2 weeks refrigerated.

Cocktail

    Chill glass

    Place a Champagne flute or coupe in the freezer for a few minutes or fill with ice water to chill while you prepare the cocktail.

    Build and shake

    In a cocktail shaker, add 1.5 oz Bristow gin, 0.5 oz fresh lemon juice, 0.5 oz lavender simple syrup, and 2 dashes El Guapo bitters. Add a handful of ice (about 1 cup). Shake vigorously for 10–12 seconds until well chilled.

    Strain

    Discard ice or water from the chilled flute. Double-strain the shaken mixture into the chilled flute to remove ice shards and any remaining lavender solids (use a fine mesh strainer if available).

    Top with sparkling wine

    Carefully top the cocktail with approximately 3 oz cold sparkling wine (brut or dry) poured gently down the side to preserve effervescence. Do not stir after adding the bubbles—just a gentle tilt to combine.

    Garnish and serve

    Garnish with a single lavender sprig or a lemon twist laid across the rim. Serve immediately while effervescent.
