Prepare Glass

Rim the glass

Rub the grapefruit wedge (or lime) around the rim of a highball or Collins glass. Pour the tsp of salt onto a small plate and gently dip the moistened rim into the salt to coat. Set the glass aside.

Fill the prepared glass about halfway with ice and set aside while you mix the mocktail.

Mix Paloma

In a cocktail shaker or a large mixing glass, combine 1 cup fresh grapefruit juice, 2 tablespoons fresh lime juice, and 2 tablespoons simple syrup. If using grapefruit bitters, add 2 dashes now.

Add a few large ice cubes to the shaker, secure the lid, and shake vigorously for 8–12 seconds to chill and slightly dilute the mixture. If you don't have a shaker, stir the mixture with ice in a mixing glass for 15–20 seconds.

Strain the chilled grapefruit-lime mixture into the prepared salt-rimmed glass over the ice already in the glass, leaving room for the sparkling water.

Top the drink with 1 cup sparkling water (or club soda). Gently stir once or twice with a bar spoon to combine without flattening the bubbles.

Taste and adjust: if the mocktail is too tart, add up to 1 tablespoon additional simple syrup and gently stir; if too sweet, add a splash more lime juice.

Garnish the drink with a grapefruit wedge or wheel and a lime wheel on the rim. Serve immediately with a straw if desired.
