Build and manage coals

Build a wood fire and let it burn down until you have a bed of hot coals with moderate, consistent heat. You want even, glowing coals rather than high flames. If using a grill, bank coals to one side so you can finish with indirect heat if needed. Total preheat time ~30–45 minutes depending on wood.

While coals develop, place the cast-iron skillet near (not directly on) the heat to warm gradually for 5–10 minutes. Brush skillet with 1 tablespoon neutral oil or bacon fat so it’s lightly coated; this will help create a crisp exterior and prevent sticking.

Make the Batter

Combine dry ingredients

In a large bowl, whisk together 1 cup cornmeal, 1 cup all-purpose flour, 2 tablespoons sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 3/4 teaspoon fine salt until evenly distributed.

Combine wet ingredients

In a separate bowl or large measuring cup whisk 1 cup buttermilk, 2 large eggs, 4 tablespoons melted butter, and 1 tablespoon honey until smooth and homogenous.

Pour the wet mixture into the dry ingredients and stir gently with a spatula or wooden spoon just until combined. Do not overmix; a few small lumps are fine. The batter should be pourable but thick—if it seems overly stiff, add up to 1–2 tablespoons more buttermilk.

Let the batter rest 5 minutes while the skillet finishes warming. This rest hydrates the cornmeal and improves texture.

Skillet Baking

Preheat skillet on coals

Place the oiled cast-iron skillet directly on the hottest part of the hot coals for 1–2 minutes to heat through. Use a heatproof glove or long-handled tongs to move the skillet. You want the skillet very hot so the bottom of the cornbread crisps quickly.

Pour batter and distribute

Carefully remove the skillet off the coals or move to an area of moderate heat. Pour the batter into the hot skillet, using a spatula to even it if necessary. The batter should sizzle as it hits the hot surface, which helps form a golden crust.

Bake over coals, covered

Set the skillet back over moderate coals. To bake evenly, place additional coals on a grill top or lid above the skillet for gentle top heat, or move the skillet to indirect heat with coals around but not directly underneath. Aim for a total bake of 18–25 minutes depending on coal temperature. Start checking at 15 minutes. Rotate the skillet 180° once halfway through to promote even browning.

Test for doneness by inserting a toothpick or skewer in the center— it should come out clean or with a few moist crumbs. The top should be golden and the edges should pull slightly away from the skillet. If the top is browning too fast, move skillet to cooler spot and cover with a lid or foil briefly.

When done, remove the skillet from heat and let cornbread rest 5 minutes in the skillet to finish setting. Use oven mitts and tongs — the skillet will be extremely hot.

Honey Butter and Serving

Make honey butter

While the cornbread bakes or rests, make the honey butter. In a small bowl, beat 4 tablespoons softened unsalted butter with 2 tablespoons local honey and 1/8 teaspoon fine sea salt until smooth and slightly whipped. Taste and adjust honey or salt to preference.

To serve, slice the cornbread into wedges in the skillet or transfer to a board. Place a dollop of honey butter on each warm wedge so it melts into the crumb. Serve immediately while hot and crusty.

Leftovers can be wrapped and kept at room temperature for 1 day or refrigerated up to 3 days. Reheat in a skillet over low heat or in an oven until warmed through; refresh with additional honey butter when serving.
