Method
Rice Base
Rinse the rice under cold water in a fine-mesh sieve until the water runs mostly clear (about 1–2 minutes). This removes excess starch and prevents gummy rice.
Combine rinsed rice, 2.75 cups water and 1/2 tsp salt in a medium saucepan. Bring to a gentle boil over medium-high heat.
Once boiling, reduce heat to low, cover, and simmer gently for 35–45 minutes for short-grain brown rice (20 minutes for white short-grain), or until water is absorbed and rice is tender. If using a rice cooker, follow the cooker instructions with the same rice-to-water ratio.
Remove from heat and let stand, covered, 10 minutes. Fluff with a fork and keep warm.
Mushroom & Vegetable Topping
In a large skillet or sauté pan, heat 1 tablespoon neutral oil over medium-high heat until shimmering.
Add the chopped spinach and cook 1–2 minutes until wilted. Drizzle 1 tsp sesame oil and toss to combine.
Sauce & Seasoning
In a small bowl, whisk together 3 tbsp soy sauce, 1 tbsp mirin, 1 tsp rice vinegar, 1/4 cup vegetable broth (or water), 1 tsp brown sugar (or maple syrup) and a pinch (1/4 tsp) crushed red pepper if using.
Make a cornstarch slurry by mixing 1 tsp cornstarch with 1 tbsp water until smooth. Pour slurry into the simmering sauce and stir constantly for about 30–60 seconds until the sauce thickens and becomes glossy. Taste and adjust seasoning — add a splash more soy or a pinch of sugar if desired.
Finish & Assemble
Top each bowl with sliced scallion greens, toasted sesame seeds, and 1–2 strips of toasted nori brushed or torn into thin ribbons. Add pickled ginger and microgreens if using.
