Rice Base

Method

Rice Base

1

Rinse the rice under cold water in a fine-mesh sieve until the water runs mostly clear (about 1–2 minutes). This removes excess starch and prevents gummy rice.

2

Combine rinsed rice, 2.75 cups water and 1/2 tsp salt in a medium saucepan. Bring to a gentle boil over medium-high heat.

3

Once boiling, reduce heat to low, cover, and simmer gently for 35–45 minutes for short-grain brown rice (20 minutes for white short-grain), or until water is absorbed and rice is tender. If using a rice cooker, follow the cooker instructions with the same rice-to-water ratio.

4

Remove from heat and let stand, covered, 10 minutes. Fluff with a fork and keep warm.

Mushroom & Vegetable Topping

5

Prepare mushrooms: wipe or quickly rinse and pat dry, then slice thickly. Thinly slice the onion and mince garlic and ginger. Slice scallions, separating white and green parts if desired.

6

In a large skillet or sauté pan, heat 1 tablespoon neutral oil over medium-high heat until shimmering.

7

Add sliced mushrooms in a single layer (work in batches if needed). Let mushrooms sear without moving for 2–3 minutes to develop color, then stir and cook another 2 minutes until they begin to brown and release juices.

8

Push mushrooms to the side and add the sliced onion. Sauté 2–3 minutes until softened. Stir in minced garlic and minced ginger and cook 30–45 seconds until fragrant.

9

Add the chopped spinach and cook 1–2 minutes until wilted. Drizzle 1 tsp sesame oil and toss to combine.

Sauce & Seasoning

10

In a small bowl, whisk together 3 tbsp soy sauce, 1 tbsp mirin, 1 tsp rice vinegar, 1/4 cup vegetable broth (or water), 1 tsp brown sugar (or maple syrup) and a pinch (1/4 tsp) crushed red pepper if using.

11

Pour the sauce into the skillet with the mushrooms and vegetables. Stir to combine and bring to a gentle simmer.

12

Make a cornstarch slurry by mixing 1 tsp cornstarch with 1 tbsp water until smooth. Pour slurry into the simmering sauce and stir constantly for about 30–60 seconds until the sauce thickens and becomes glossy. Taste and adjust seasoning — add a splash more soy or a pinch of sugar if desired.

Finish & Assemble

13

Divide fluffed rice between 2–3 bowls (depending on appetite). Spoon the mushroom and spinach mixture evenly over the rice.

14

Top each bowl with sliced scallion greens, toasted sesame seeds, and 1–2 strips of toasted nori brushed or torn into thin ribbons. Add pickled ginger and microgreens if using.

15

Serve with a lime wedge on the side for squeezing over the bowl. Offer extra soy or chili oil at the table.
