Prepare seasoned rice

While the cooked short-grain rice is still slightly warm, gently fold in rice vinegar, sugar, and salt until evenly distributed. Chill in the refrigerator for 20–30 minutes to firm up (this makes it easier to shape).

Form rice cakes

Wet your hands lightly. Divide the chilled rice into six equal portions (about 1/3 cup each). Press each portion into a compact rectangular or oval patty roughly 2.5–3 inches long and 1/2 inch thick. Press firmly so the pieces hold together.

Crisp the rice

Heat neutral oil and sesame oil in a large nonstick or cast-iron skillet over medium-high heat until shimmering. Add the rice patties, leaving room between them. Fry 3–4 minutes on the first side without moving until a deep golden crisp crust forms. Flip carefully and fry the other side 2–3 minutes until crisp. Remove to a wire rack or paper towel-lined plate to drain and keep warm. You may finish in a 250°F (120°C) oven for 5–10 minutes if making ahead to keep crisp.

Tuna Topping

Prepare tuna

Pat the ahi tuna dry and trim. Cut into 1/4-inch dice for a tartare-style topping. Place the diced tuna in a bowl.

Season tuna

Add light soy sauce, mirin, sesame oil, sliced scallions, toasted sesame seeds, and salt to the tuna. Gently toss to combine. Taste and adjust seasoning; refrigerate briefly if needed but serve sushi-cold to maintain freshness.

Miso Mayo

Whisk together mayonnaise, white miso paste, lemon juice, and sriracha (if using) until smooth. Taste and adjust for brightness or heat. Transfer to a squeeze bottle or small piping bag for easier assembly.

Umami Sauce

Combine soy sauce, mirin, dashi powder (or cooled dashi), sugar, and toasted sesame oil in a small bowl. Stir until sugar dissolves. Taste and adjust balance of salt/sweet/umami. Keep at room temperature.

Garnish & Assembly

Toast/prepare nori

If your nori sheets are not pre-toasted, briefly pass them over an open flame or hot pan until fragrant, then cut into thin strips. Reserve.

Assemble crispy rice bites

Place six warm crispy rice cakes on a serving plate. Lightly brush or spoon a small amount (about 1/2 tsp) of umami sauce onto the top of each rice cake to add seasoning and help the tuna adhere.

Top with tuna

Mound approximately 1.25 oz (about 2 tablespoons) of the seasoned diced ahi onto each sauced rice cake, pressing gently so it sits firmly.

Finish with miso mayo and garnish

Dot or drizzle about 1/2 teaspoon of miso mayo over each tuna mound. Add a few microgreens on top of each piece, and place a small strip of roasted nori decoratively across or beside the tuna. If desired, add a tiny swipe of pickled ginger on the plate for cleansing the palate.

Serve

Serve immediately while rice is still warm and crisp. Provide extra umami sauce and miso mayo on the side if desired.
