Method
Crab Dip
Preheat
Preheat the oven to 375°F (190°C). Lightly grease a 9-inch (or similar) shallow baking dish or oven-safe skillet.
Prepare crab
Check the lump crab meat for shells and cartilage. Gently fold the crab into a medium bowl to loosen lumps; set aside.
Mix base
In a large bowl, beat the softened cream cheese until smooth. Add the sour cream, mayonnaise, Dijon mustard, Worcestershire sauce, hot sauce, lemon zest and lemon juice, minced garlic, salt and black pepper. Mix until fully combined and smooth.
Add cheeses and herbs
Stir in 1 1/4 cups shredded aged white cheddar, grated Parmesan, and 1 tablespoon chopped chives into the cream mixture until evenly incorporated.
Fold in crab
Gently fold the lump crab meat into the cheese mixture, taking care to keep larger lumps intact. Taste and adjust seasoning with additional salt, pepper, or a squeeze of lemon if desired.
Transfer to baking dish
Spoon the mixture into the prepared baking dish, smoothing the top with a spatula. Sprinkle the remaining 1/4 cup shredded cheddar evenly over the surface, then drizzle the melted butter over the top to encourage browning.
Bake
Bake in the preheated oven until bubbly and lightly golden on top, about 20–25 minutes. If you want a deeper brown top, broil for 1–2 minutes while watching closely.
Finish
Remove from oven and let rest for 5 minutes. Sprinkle remaining chopped chives on top before serving.
Garlic Lemon Crostini
Prepare bread
While the dip bakes, arrange baguette slices on a baking sheet. Brush each slice lightly with olive oil and season with salt and pepper.
Toast
Toast the slices in the oven alongside the dip for about 6–8 minutes, or until edges are crisp and just turning golden. Alternatively, toast in a skillet over medium heat, turning once.
Rub with garlic and lemon
Remove to a cooling rack. Rub the cut side of the halved garlic clove over the warm toasts for a subtle garlic flavor. Finish by rubbing with the lemon half for a bright citrus note.
