Inspect and open

Inspect the bottle for sediment (more likely in older reds). If corked, use a waiter’s corkscrew: cut the foil about 1 cm below the lip, remove the foil, center the screw and twist straight down into the cork leaving one spiral exposed, then lever out the cork slowly. For synthetic cork or screwcap, remove accordingly.

Pour a small tasting amount (about 30–60 ml) into a glass. Smell to confirm there are no off aromas (musty, overly vinegar-like). Taste a sip to confirm the wine is sound and at the right temperature and flavor profile for your service.

If serving chilled (white/rosé)

Chill quickly

Fill an ice bucket or large bowl with ice and a little water to improve contact. Submerge the bottle and chill for 10–15 minutes until the bottle feels cold to the touch (around 45–50°F / 7–10°C).

Alternative refrigeration

If you have time, place the bottle in the refrigerator for 2–3 hours before serving. Remove from ice/water and dry the bottle before presenting.

If serving with simple pairing (optional)

Arrange the sliced cheese, crackers, and almonds on a small board or plate. If using fig jam or honey, add a small spoon or drizzle near the cheese. Serve alongside the wine so guests can taste combinations.
