Prepare

Preheat oven to 350°F (175°C). Lightly grease a 6- or 8-cavity mini muffin pan or line with paper liners.

Melt the chopped bittersweet chocolate and 1/2 cup unsalted butter together in a heatproof bowl set over (not touching) simmering water, stirring until smooth. Alternatively microwave in 20-second bursts, stirring between, until melted and smooth.

Whisk the granulated sugar into the melted chocolate mixture until combined. Add the egg and 1/2 tsp vanilla and whisk vigorously until glossy and slightly thickened (about 30 seconds).

Sift together the 1/2 cup all-purpose flour, 2 tbsp cocoa powder and 1/4 tsp salt into the chocolate mixture. Fold gently with a spatula just until no streaks of flour remain—do not overmix.

Spoon the batter into the prepared mini muffin cavities, filling each about three-quarters full. Smooth tops with the back of a spoon.

Bake for 10–14 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs (brownie should be soft and fudgy). Rotate pan halfway through if your oven has hot spots.

Allow brownie bites to cool in the pan for 5 minutes, then transfer to a wire rack to cool slightly while you prepare the sauce and whipped cream. They should be warm when served.

White Chocolate Sauce

Place 3/4 cup white chocolate and 1/4 cup heavy cream in a small heatproof bowl. Warm the cream until it’s steaming but not boiling (microwave ~30–45 seconds or heat on the stovetop).

Pour the hot cream over the white chocolate and let sit 1 minute to soften. Stir gently until smooth. If needed, return to very low heat or microwave in 10-second bursts to fully melt and combine; avoid overheating to prevent separation.

Stir in 1 tsp butter (optional) and 1/4 tsp vanilla for shine and flavor. Keep the sauce warm by placing the bowl over the still-warm (but off) double-boiler or in a thermos; stir occasionally. If sauce thickens, whisk in a teaspoon of warm cream to loosen.

Real Whipped Cream

Chill a small mixing bowl and beaters (or whisk) in the freezer for 5–10 minutes for best volume.

Pour 1/2 cup cold heavy cream into the chilled bowl. Add 1 tbsp confectioners' sugar and 1/8 tsp vanilla.

Whip by hand or with an electric mixer on medium-high until soft to medium peaks form (the cream should hold shape but still be glossy). Do not overwhip into grainy butter.

To Finish & Serve

Place 2–3 warm brownie bites on individual serving plates or in a shallow bowl.

Drizzle each portion generously with warm white chocolate sauce — about 2–3 tablespoons per serving — so the sauce pools around and slightly soaks into the brownies.

Top each serving with a generous dollop (about 2 tablespoons) of freshly whipped cream.

Sprinkle a tiny pinch (about 1/8 tsp) of kosher salt over the sauce for contrast if desired, and garnish with white chocolate shavings or curls.
