Prepare greens

Wash and thoroughly dry the romaine lettuce and baby spinach. Tear the romaine into bite-sized pieces and place both greens into a large salad bowl (about 12-inch).

Cook and chop bacon

If bacon is not already cooked, cook 8 slices in a skillet over medium heat until crisp, about 8–10 minutes, turning occasionally. Drain on paper towels, then chop into 1/2-inch pieces.

Poach or boil eggs

Place eggs in a saucepan, cover with cold water by 1 inch, bring to a gentle boil, then remove from heat and cover for 10 minutes for hard-boiled eggs. Transfer to an ice bath, peel, and quarter each egg.

Prepare chicken

Use leftover roasted or poached chicken breast or quickly pan-sear two breasts (about 12–16 oz total). Season with a pinch of salt and pepper, cook until internal temperature reaches 165°F (74°C), rest 5 minutes, then dice into 1/2-inch cubes to yield ~2 cups.

Prepare avocado and tomatoes

Cut avocados in half, remove pits, score the flesh into 1/2-inch cubes while still in the skin, then scoop out with a spoon. Halve the cherry tomatoes.

Assemble salad

On the bed of mixed greens, arrange the diced chicken, quartered eggs, chopped bacon, avocado cubes, and halved tomatoes in rows or sections for a classic Cobb presentation. Sprinkle crumbled blue cheese, sliced green onions, chopped parsley (if using), and season with 1 tsp kosher salt and 1 tsp freshly ground black pepper evenly over the salad.

Dressing

Make the dressing by combining 1 cup extra-virgin olive oil, 3 tbsp red wine vinegar, 1 tbsp fresh lemon juice, 1 tsp Dijon mustard, 1 tsp honey, and 1 tsp minced garlic in a jar or bowl. Add 1 tsp salt and 1 tsp black pepper. Whisk vigorously or shake in a covered jar until emulsified and slightly thickened. Taste and adjust seasoning (add a little more honey for sweetness or more vinegar for brightness).

Just before serving, drizzle desired amount of dressing over the assembled salad (about 1/2 to 3/4 cup for entire salad) and gently toss portions on plates or serve family-style with the dressing on the side.
