Spicy Vegan Mayo
Method
Prepare Tofu
Press and Cube Tofu
Press the tofu to remove excess moisture, then cut it into small cubes.
Sauté Tofu
In a skillet, heat sesame oil over medium heat. Add the tofu cubes and cook until golden and crispy, about 8-10 minutes.
Add Flavor
Add grated ginger and soy sauce to the tofu. Stir to combine and cook for an additional 2-3 minutes.
Prepare Wontons and Filling
Fry Wonton Wrappers
In a separate pan, heat oil and fry wonton wrappers until crispy. Remove and drain on paper towels.
Combine Filling
In a bowl, mix the sautéed tofu, cashews, and diced fresh vegetables together.
Make Spicy Vegan Mayo
Mix Ingredients
In a small bowl, whisk together vegan mayonnaise, sriracha sauce, lime juice, and garlic powder until smooth.
Assemble Lettuce Wraps
Fill Lettuce Leaves
Take a lettuce leaf and add a spoonful of the tofu mixture, a few crispy wontons, and a drizzle of spicy vegan mayo.
Serve
Fold the lettuce over the filling and enjoy your crispy vegan tofu lettuce wraps!
