Method
Preparation of Chicken
Marinate the Chicken
In a bowl, mix soy sauce, lime juice, garlic, ginger, and honey. Add chicken breasts and marinate for at least 30 minutes.
Cook the Chicken
Grill or sauté the marinated chicken until fully cooked, about 6-7 minutes per side. Let it rest before slicing.
Assembly of Salad
Prepare the Salad Base
In a large bowl, combine arugula, ancient grains, cherry tomatoes, cucumber, and red bell pepper.
Add Chicken and Toppings
Slice the cooked chicken and add to the salad. Top with avocado, pumpkin seeds, cashews, and crispy rice.
Make the Dressing
In a small bowl, whisk together cashew butter, soy sauce, lime juice, honey, water, and red pepper flakes until smooth.
Serve
Drizzle dressing over the salad and toss gently to combine. Serve immediately.
