Crispy chicken, cashews, ginger, sesame, crispy wontons, fresh vegetables, lettuce & spicy mayo
In a bowl, combine diced chicken, soy sauce, grated ginger, sesame oil, and cornstarch. Mix well and let marinate for at least 15 minutes.
In a small bowl, mix mayonnaise and sriracha sauce together until well combined. Set aside.
Heat a skillet over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 5-7 minutes.
Once the chicken is cooked, add shredded carrots, diced bell pepper, sliced green onions, and chopped cashews to the skillet. Stir-fry for an additional 2-3 minutes until vegetables are slightly tender.
Lay out the lettuce leaves on a serving platter. Spoon the chicken and vegetable mixture onto each leaf, top with crispy wontons, and drizzle with spicy mayo. Serve immediately.
