Prepare Glass & Garnish

1. Chill and prep

Place a white wine glass or stemmed wine goblet in the refrigerator for 10–15 minutes before serving, or fill with ice while preparing ingredients to chill quickly. Prepare a lemon wheel or twist and pick a fresh mint sprig; set aside.

Assemble Cocktail

2. Fill the chilled wine glass about halfway with ice (about 1 cup). This keeps the wine refreshingly cold and preserves effervescence when soda is added.

3. Pour 5 oz of chilled Pinot Grigio into the glass over the ice.

4. Add 0.5 oz fresh lemon juice to brighten the wine. Taste and, if you prefer a touch of sweetness, add 0.25 oz simple syrup and gently stir once to combine. Stirring lightly preserves bubbles from the soda.

5. Top with 2 oz chilled club soda or sparkling water. Pour slowly along the inside of the glass to maintain effervescence.

Finish & Serve

6. Garnish with the lemon wheel or twist hooked on the rim and a sprig of fresh mint gently slapped between your palms to release aroma, then placed in the glass.

7. Serve immediately. Recommend sipping with a small straw or directly from the glass to enjoy the wine’s aroma and the soda’s lift.
