Prepare the Chicken
Cut the boneless chicken thighs into bite-sized pieces and set aside.
Mix the Marinade
In a bowl, combine the Thai red chili paste, soy sauce, honey, minced garlic, minced ginger, and lime juice. Mix well.
Marinate the Chicken
Add the chicken pieces to the marinade, ensuring they are well-coated. Let it marinate for at least 30 minutes.
Cook the Chicken
Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 7-10 minutes.
Add Garnish
Stir in the sesame oil and sliced green onions. Cook for an additional 2 minutes.
Serve
Transfer to a serving plate, garnish with chopped cilantro, and serve hot.
