In a large brew kettle, heat 16 cups of filtered water to about 165°F (74°C). Add the Pilsner and caramel malt, maintaining the temperature for 60 minutes to allow the grains to steep.

Mash the Grains

After mashing, rinse the grains with hot water (sparging) to extract fermentable sugars. Bring the wort to a boil, then add Saaz hops and Hallertau hops. Boil for 60 minutes.

Sparge and Boil

After boiling, cool the wort quickly to about 70°F (21°C) using a wort chiller or an ice bath.

Cool the Wort

Transfer the cooled wort into a sanitized fermentation vessel and pitch the lager yeast. Seal with an airlock and allow it to ferment at 50°F (10°C) for 2 weeks.

Fermentation

After fermentation is complete, transfer the beer to a bottling bucket with priming sugar and bottle. Let it condition for another 2 weeks at room temperature.

Conditioning

Chill the bottles in the refrigerator, pour into a glass, and enjoy your refreshing summer lager!
