Prepare the Base
In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.
Add Potatoes and Broth
Stir in the diced potatoes, chicken broth, thyme, bay leaf, salt, and black pepper. Bring to a simmer and cook for about 15 minutes or until the potatoes are tender.
Incorporate Clams and Cream
Add the chopped clams and heavy cream to the pot. Stir to combine and let it cook for an additional 5 minutes, ensuring the clams are heated through.
Final Touches
Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with crispy bacon and chopped parsley.
