Cooking the Pasta and Sauce

Cook the Pappardelle

In a large pot of boiling salted water, cook the fresh pappardelle pasta according to package instructions until al dente, about 3-4 minutes. Drain and set aside.

Prepare the Sauce

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.

Cook the Sausage

Add the pork sausage to the skillet, breaking it up with a spatula. Cook until browned and no longer pink, about 7-10 minutes.

Add Tomatoes and Seasoning

Add the canned diced tomatoes to the skillet along with the Italian herbs, salt, and black pepper. Stir well and let the sauce simmer for 10-15 minutes, allowing the flavors to meld.

Combine Pasta and Sauce

Once the sauce has thickened, gently toss in the cooked pappardelle pasta, ensuring the pasta is well coated with the sauce. Remove from heat.

Prepare the Garlic Ciabatta

While the sauce is simmering, preheat your oven as per the garlic ciabatta baguette package instructions. Bake the baguette until golden brown and crispy.

Plate the pappardelle with tomato ragù and top with grated manchego cheese. Serve with slices of garlic ciabatta on the side.
