Preparation of Topping

Prepare the Tomatoes

Dice the fresh tomatoes and place them in a mixing bowl.

Add Basil and Seasonings

Chop the fresh basil leaves and add to the bowl with tomatoes. Mince the garlic cloves and add them as well. Season with salt and black pepper. Mix gently and set aside to allow the flavors to meld.

Balsamic Reduction

Cook the Balsamic Reduction

In a small saucepan, combine the balsamic vinegar and honey. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 10-15 minutes, or until the mixture has reduced by half and has thickened. Remove from heat and allow to cool.

Prepare the Bread

Slice the Bread

Slice the baguette or Italian bread into 1/2 inch thick slices.

Grill the Bread

Brush both sides of each slice with olive oil. Preheat a grill or grill pan over medium-high heat. Grill the bread slices for about 2-3 minutes on each side, or until they are golden brown and have grill marks. Remove from grill.

Assembly

Top the Bread

Spoon the tomato and basil mixture generously onto each grilled bread slice.

Drizzle with Balsamic Reduction

Drizzle the balsamic reduction over the topped bruschetta just before serving for added flavor.
