Garnish & Rim
Prepare the rim mix: on a small plate combine the chili-lime seasoning and fine sea salt. If using chili powder and lime zest, mix about 3/4 tsp chili powder with 1/4 tsp fine salt and 1/4 tsp lime zest.
Moisten the serving glass rim with the lime wedge: run the wedge around the top edge of a chilled rocks glass or coupe.
Dip the moistened rim into the chili-lime salt mixture, twisting gently to coat evenly. Set the glass aside.
Cocktail
Build and shake
Add Seedlip Garden 108 (2 oz), passion fruit purée (1 oz), fresh lemon juice (1/2 oz), and simple syrup (1/2 oz) into a cocktail shaker. Add a generous handful of ice (about 1 cup cubed).
Shake vigorously for 12–15 seconds until the shaker is cold to the touch and the mixture is well-chilled and slightly frothy from the passion fruit.
Fill the prepared glass with fresh ice (if serving on the rocks) or leave it chilled and empty (if serving up). Strain the cocktail through a fine strainer into the glass to remove pulp and seeds if desired. If using half a passion fruit as garnish, spoon a small amount of pulp into the drink or float it on top for visual appeal.
Garnish with a lemon wheel or twist on the rim and/or the reserved passion fruit half. Serve immediately.
