Method
Base Cocktail
Combine and shake
Add Don Q Cristal white rum (2 oz), Liber & Co. almond orgeat (0.75 oz), fresh lime juice (0.75 oz), pomegranate juice (0.5 oz), and pineapple juice (1 oz) into a cocktail shaker. Fill the shaker about two-thirds with ice. Secure the lid and shake vigorously for 10–15 seconds until the outside of the shaker is frosty and well-chilled.
Prepare glass
Fill a double old-fashioned glass or Mai Tai-style glass with crushed ice, leaving a little room at the top for the cocktail and the float.
Strain
Double-strain (or fine-strain if available) the shaken mixture over the crushed ice in the prepared glass to keep the texture smooth and remove small ice shards.
Float Ron Zacapa No. 23
Using the back of a bar spoon, slowly pour Ron Zacapa No. 23 (0.5 oz) over the back of the spoon held just above the surface of the cocktail so the rum floats on top, creating an aromatic top layer.
Garnish & Finish
Garnish the cocktail with a pineapple wedge, a maraschino cherry, and a lime wheel on the rim or skewered together. Optionally slap a lime wheel or a small mint sprig (not in ingredients list) between your hands and place it on top to release aromatics.
Serve with a straw and a small stirrer. Advise the drinker to gently stir if they want more integration of the float, or sip through the float to savor the Ron Zacapa aroma first.
