Method
Greens & Base
Prepare kale
Remove tough stems from the kale and stack leaves. Thinly slice into ribbons. Place sliced kale in a large mixing bowl.
Massage kale
Drizzle 1 teaspoon of the olive oil and 1 tablespoon lemon juice over the kale. Sprinkle 1/4 teaspoon salt. Massage the kale with clean hands for 2–3 minutes until it softens and turns a darker green. This tenderizes the leaves so no creamy dressing is required.
Add cooked and cooled quinoa to the massaged kale and toss gently to combine so the grains separate and distribute through the leaves.
Vegetables & Fruit
Prepare the vegetables and fruit: halve cherry tomatoes, dice cucumber, red bell pepper, thinly slice red onion, and dice the apple or pear. Add all to the kale-quinoa mixture.
Toss gently to combine so the vegetables are evenly distributed.
Herbs, Nuts & Seeds
Toss to incorporate, breaking up any clumps of nuts so they distribute evenly.
Cheese & Optional Add-ins
If using, add crumbled feta or goat cheese and optional cooked chickpeas or roasted sweet potato. These add-ins increase creaminess and protein without a dressing.
Gently fold them in to avoid crushing the cheese or breaking the roasted vegetables.
No-Dressing Flavor Boosters
In a small bowl or measuring cup combine remaining 1 tablespoon lemon juice, remaining 2 teaspoons olive oil (or the rest of the 1 tablespoon if you used 1 tsp earlier), soy sauce or tamari, honey or maple syrup, remaining 1/4 teaspoon salt, and black pepper. Whisk briefly to combine. This light seasoning (not a heavy dressing) is used sparingly to finish the salad so it remains 'no-dressing' in spirit.
Pour the seasoning mixture evenly over the salad in a slow stream while gently tossing. Taste and adjust: add a pinch more salt or a squeeze of lemon if needed. The goal is a light coating and bright flavor rather than a saucy dressing.
Let the salad rest 5–10 minutes before serving so flavors meld; toss once more just before plating.
