Harvest and Preparation

Harvest timing

Harvest Pinot Noir fruit at physiological ripeness typical for Russian River Valley—target sugar (Brix) 24–25, total acidity ~6–7 g/L, pH 3.45–3.6. Harvest in the cool morning to preserve aromatics.

Sort fruit on arrival: remove rotten berries, leaves, and stems if not planning whole-cluster fermentation. Keep desired whole clusters separate (the optional 2 kg) for later addition if you want a portion of whole-cluster character.

Crush, Inoculation, and Primary Fermentation

Crush or lightly destem grapes into a sanitized fermentation vessel (open-top tank or fermenter). If using whole-cluster inclusion, add the selected 2 kg of whole clusters into the must now to achieve a 10–15% whole-cluster proportion.

Measure must °Brix, pH, and TA. Adjust acidity if necessary by adding tartaric acid (add small increments and recheck). If Brix is below target, consider chaptalization only if legal/desired; otherwise accept natural sugar and adjust expectations for alcohol.

If grapes were not sulfited at harvest, add 1/2 tsp potassium metabisulfite (equivalent to ~30 ppm SO2) to the must and wait 12–24 hours before inoculation to allow wild yeast suppression.

Rehydrate chosen wine yeast per manufacturer's instructions and pitch into must along with 1 tsp yeast nutrient. Ensure must temperature is 18–22°C (64–72°F) at inoculation to preserve delicate Pinot Noir aromatics.

Fermentation Management and Cap Handling

Allow cold soak (optional) of the must for up to 3–5 days at 10–12°C (50–54°F) before active fermentation begins if enhanced color and aromatics are desired.

During active fermentation, maintain temperature between 22–27°C (72–80°F). Monitor fermentation progress with daily density readings. Perform gentle punch-downs of the cap 2–3 times per day early in fermentation; reduce to once daily toward the end to avoid excessive tannin extraction.

If fermentation is vigorous and the cap is high, perform pump-overs or délestage once or twice to ensure even extraction and temperature control. Target a fermentation duration of 7–12 days on the skins until dryness (~0–2 g/L residual sugar).

Pressing and Malolactic Fermentation

When fermentation is complete and desired extraction achieved, press the wine off the skins using a bladder press or basket press. Transfer free-run and press fractions to separate containers if desired; blending later allows control of tannin levels.

Rack wine to a clean vessel and check sulfur dioxide levels; adjust to ~30 ppm free SO2 as needed with potassium metabisulfite. Inoculate with malolactic bacteria once alcohol and temperature are suitable (typically 18–22°C). Monitor MLF completion by measuring malic acid.

Oak Aging and Elevage

Transfer wine to French oak barrels (225 L) of medium-plus toast. Use a mix of new and 1–2 year used barrels to emulate Hartford Court's balanced oak influence. Aim for 10–18 months of barrel aging depending on desired oak intensity.

Top barrels regularly to minimize headspace and avoid oxidation. Rack once or twice during aging to remove gross lees; stir lees gently if a slight lees influence is desired for texture (optional).

Taste periodically and adjust SO2 to maintain ~25–40 ppm free SO2. If clarifying, perform fining with bentonite or chosen fining agent toward the end of barrel aging, followed by cold stabilization if needed.

Blending, Bottling, and Bottle Aging

After barrel aging and MLF completion, blend free-run and press fractions and any small percentage blending variety (the optional 1 kg) to achieve balance representative of Russian River Valley Pinot Noir: vibrant red fruit, supple tannins, and integrated oak.

Stabilize final wine (cold stabilization if tartrate precipitation expected), adjust final SO2 to bottling level (~30 ppm free), and filter if desired (sterile or nominal filtration based on winery practice).

Bottle into 750 ml bottles under inert gas or with minimal oxygen pickup. Cork and allow bottle aging for at least 6–12 months before release; the wine will continue to evolve for several years.
