Method
Classic Margarita
Prepare glass
Run a lime wedge around the rim of a rocks or coupe glass. Dip the rim into coarse salt to coat. Fill the glass with ice to chill while you mix.
Shake
In a cocktail shaker add reposado tequila (2 oz), fresh lime juice (1 oz), orange liqueur (0.75 oz), agave syrup (0.5 oz) and a handful of ice. Shake vigorously for 10–15 seconds until well chilled.
Whiskey Sour
Dry shake (if using egg white)
If using egg white, add bourbon (2 oz), lemon juice (0.75 oz), simple syrup (0.75 oz) and egg white (0.5 each) to a shaker with no ice. Dry shake vigorously for 15 seconds to emulsify.
Wet shake
Add ice to the shaker and shake again for 10–15 seconds until well chilled and frothy. If not using egg white, combine the spirits, citrus and syrup with ice and shake once for 10–15 seconds.
Strain & finish
Double-strain into an Old Fashioned glass over fresh ice. Add 2 dashes of angostura bitters on top of the foam (if egg white used) and garnish with a lemon wheel or cherry.
Grapefruit Gin Fizz
Shake
In a shaker combine dry gin (1.75 oz), fresh grapefruit juice (1 oz), lemon juice (0.5 oz) and honey syrup (0.5 oz) with ice. Shake vigorously for 10–12 seconds.
Garnish
Express a grapefruit twist over the drink and drop it in as garnish.
Old Fashioned
Build in glass
Place demerara syrup (0.25 oz) and 3 dashes of angostura bitters in a rocks glass. Add rye or bourbon (2 oz) and a large ice cube.
Stir & garnish
Stir gently for 20–30 seconds to chill and dilute slightly. Express the orange peel over the glass to release oils, rub the rim with the peel and drop it in as garnish.
Moscow Mule
Build
Fill a copper mug or highball with crushed ice. Add vodka (2 oz) and fresh lime juice (0.5 oz).
Top & garnish
Top with 4 oz ginger beer and stir briefly. Garnish with a lime wedge and serve with a straw.
