Prepare oysters

Keep oysters cold until ready to shuck. Rinse shells under cold running water and scrub to remove debris. Place a damp towel over your hand for grip and hold oyster cupped side down. Insert a short, sturdy oyster knife into the hinge, twist gently until it pops, then run the knife along the top shell to sever the adductor muscle. Remove the top shell and loosen the oyster from the bottom shell, taking care to keep the liquor in the shell.

Arrange a serving platter with crushed ice to create a stable, chilled bed. Nestle each shucked oyster into the ice, ensuring they sit level so the liquor does not spill. Keep oysters on ice until service.

Cut lemon into wedges and place on the platter for guests to squeeze over oysters.

Classic mignonette

Make mignonette

Combine the finely minced shallot, red wine vinegar, granulated sugar, cracked black pepper, and kosher salt in a small bowl. Stir until sugar and salt dissolve. Let the mixture rest at room temperature for 10–15 minutes to allow flavors to marry. Taste and adjust seasoning—add a pinch more sugar if too sharp, or an extra splash of vinegar for brightness. Chill briefly if making ahead.

Transfer mignonette to a small serving dish or pourable cruet for guests to spoon over oysters.

Spicy house sauce

Prepare spicy sauce

In a small bowl, whisk together prepared horseradish, ketchup, sriracha, fresh lemon juice, and Worcestershire sauce until smooth. Taste and adjust heat (add more sriracha) or acidity (add a touch more lemon) to preference.

Spoon sauce into a ramekin and place on the serving platter alongside mignonette.

Whisk vinaigrette

Whisk together lemon juice, orange juice, olive oil, red pepper flakes, and salt until slightly emulsified. This light vinaigrette can be drizzled sparingly over oysters for a bright, spicy finish.

Garnish & service

Scatter chopped flat-leaf parsley and optional microgreens lightly over the ice around the oysters for a fresh, attractive presentation. Serve immediately with lemon wedges, mignonette, spicy house sauce, and the optional citrus-chili vinaigrette.
