Build the base
In a cocktail shaker, add 1.5 oz bourbon, 0.5 oz fresh lemon juice, 0.5 oz maple syrup, 0.25 oz ginger liqueur (or ginger syrup), and 2 dashes of Angostura bitters.
Shake
Add a small handful of ice to the shaker and shake vigorously for 8–10 seconds until well chilled and slightly diluted.
Prepare glass
Discard the ice water from the chilled glass (if used) and add about 1 cup of fresh ice.
Strain and top
Strain the shaken mixture into the prepared glass over ice. Immediately top with 12 oz unfiltered hard apple cider (Downeast-style), pouring gently to preserve carbonation.
Finish and garnish
Give the drink a gentle stir (1–2 turns) to combine the cider with the spirit base. Garnish with an apple slice on the rim and a sprig of thyme or rosemary tucked into the glass for aroma.
Serve
Serve immediately while the cider is fizzy and cold.
