Prepare oven and pan
Preheat oven to 350°F (175°C). Lightly grease a mini muffin pan (12-cup) or line with paper liners.
Melt butter and chopped semi-sweet chocolate together: place butter and chocolate in a heatproof bowl set over a barely simmering pot of water (double boiler) or microwave in 20 second bursts, stirring until smooth and glossy. Let cool 2–3 minutes.
In a medium bowl, whisk the granulated sugar and the egg until combined and slightly thickened (about 30 seconds). Stir in the vanilla extract.
Sift together the all-purpose flour, unsweetened cocoa powder, and a pinch of salt. Gently fold the dry ingredients into the wet mixture until just incorporated; do not overmix.
Spoon batter into the prepared mini muffin pan, filling each cup about 3/4 full (should make roughly 10–12 bite-sized brownies). Smooth tops lightly.
Bake for 10–13 minutes, until edges are set but centers still slightly soft (a toothpick inserted will have a few moist crumbs). Allow brownies to cool in the pan 5 minutes, then transfer to a wire rack to cool another 5–10 minutes. Serve warm or at room temperature.
Warm Chocolate Sauce
Combine heavy cream and light corn syrup in a small saucepan and heat over medium-low until it just begins to steam — do not boil.
Place chopped dark chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let sit 1 minute to soften, then stir until smooth and glossy. Stir in a pinch of salt. Keep warm over very low heat or transfer to a small thermal container; if sauce thickens, whisk in a tablespoon of warm cream to loosen before serving.
Vanilla Bean Ice Cream & Whipped Cream
If making whipped cream: chill a small mixing bowl and whisk or beaters for 10 minutes. Pour the 3 oz heavy cream into the bowl with powdered sugar and vanilla extract. Whip to soft peaks (about 1–2 minutes by electric mixer on medium). Do not overbeat; transfer to refrigerator until ready to plate.
Scoop vanilla bean ice cream into 4 portions (about 4 scoops total as listed) and place on plates or bowls just before serving.
Assembly & Garnish
Warm serving: Reheat brownie bites briefly in a 300°F oven for 3–4 minutes or microwave a single bite for 8–12 seconds until warm but not hot.
Place 2–3 warm brownie bites on each serving plate or in a small dessert bowl. Add one scoop of vanilla bean ice cream per plate.
Generously spoon warm chocolate sauce over the brownies and around the ice cream. Add a dollop of fresh whipped cream beside the ice cream.
Finish with grated or drizzled white chocolate and garnish with a mint leaf if desired. Serve immediately so brownie, sauce and ice cream contrasts: warm, gooey brownie and sauce with cold ice cream and real whipped cream.
