Prepare and preheat
Preheat oven to 175°C (350°F). Line an 8x8-inch (20x20 cm) square baking pan with parchment paper, leaving a 2-inch overhang on two sides for easy removal. Lightly butter the parchment.
Melt butter and chocolate together: In a medium heatproof bowl set over a gently simmering saucepan of water (double boiler) or in 20–30 second bursts in the microwave, melt the butter and chopped bittersweet chocolate until smooth, stirring frequently. Remove from heat and let cool 3–5 minutes.
Combine sugars and eggs: In a separate large bowl, whisk the granulated sugar and light brown sugar with the eggs until combined. Whisk in the vanilla extract. Temper the egg mixture by slowly pouring about one-third of the warm chocolate mixture into the eggs while whisking continuously to avoid scrambling, then whisk the tempered mixture back into the remaining chocolate until smooth.
Dry ingredients: Sift or whisk together the all-purpose flour, unsweetened cocoa powder, and fine sea salt. Fold the dry mixture gently into the chocolate mixture with a spatula until just combined — do not overmix; a few streaks are fine.
Add-ins: Fold in the dark chocolate chips/chunks and toasted nuts (if using) evenly into the batter.
Bake: Spread the batter evenly into the prepared pan, smoothing the top. Bake on the center rack for 20–25 minutes for fudgy brownies (25–28 minutes if you prefer slightly more set). A toothpick inserted into the center should come out with moist crumbs but not wet batter.
Cool in pan: Remove from oven and immediately sprinkle the surface with flaky sea salt. Allow the brownie to cool completely in the pan on a wire rack (at least 1 hour) so it firms up for neat slicing. Use the parchment overhang to lift the brownie from the pan and transfer to a cutting board. Cut into 12 bite-sized squares (or 9 larger pieces).
Serving & garnish (Summer Feature)
Plate for summer feature: Place one brownie bite on each serving plate. Add a small quenelle or scoop (about 1–2 tbsp / 20–40 ml) of vanilla bean ice cream alongside the brownie. Spoon 1 tablespoon (about 15 ml) of raspberry coulis on the plate or make a small smear with the back of a spoon.
Garnish and finish: Arrange 3–4 fresh raspberries next to the brownie and ice cream. Top with a micro basil or mint leaf for a fresh herbal note. If desired, dust a tiny pinch of cocoa powder over the plate. Serve immediately so the ice cream contrasts with the warm or room-temperature brownie.
Make-ahead & storage: Brownies keep well for 2–3 days stored airtight at room temperature or up to 5 days refrigerated. Warm slightly before serving and add fresh berries and ice cream just before plating.
