Burger Sauce

In a small bowl combine mayonnaise, ketchup, dill pickle relish, yellow mustard and apple cider vinegar.

Add garlic powder, onion powder, smoked paprika, salt and black pepper. Whisk vigorously until smooth and homogenous.

Taste and adjust: add a pinch more vinegar for brightness, more relish for sweetness, or more mustard for tang. Refrigerate the sauce while you cook the patties (at least 10 minutes) to let flavors meld.

Prepare patties

Remove Beyond Meat patties from packaging and let sit at room temperature 5–10 minutes while you preheat. This helps even cooking.

Preheat pan or grill

Heat a heavy skillet or griddle over medium-high heat. Add neutral oil and swirl to coat. For a grill, preheat to medium-high and oil the grates.

Season both sides of each patty lightly with salt and black pepper just before cooking.

Place patties on the hot skillet or grill. Cook undisturbed for 3–4 minutes until a brown crust forms.

Flip the patties and immediately place a slice of aged white cheddar on each patty. Cook another 3–4 minutes until the cheddar begins to melt and internal temperature reads about 165°F (74°C) or patties are hot through. Reduce heat if cheese is melting too quickly.

During the last 1 minute, toast the cut sides of the burger buns in a separate pan brushed with butter or plant-based spread until golden (about 30–60 seconds).

Spread 1–2 tablespoons of the prepared burger sauce on the bottom half of each toasted bun.

Place a lettuce leaf on the sauced bottom bun, then a cooked Beyond Meat patty with melted aged white cheddar on top of the lettuce.

Add tomato slices, red onion rings and pickle slices on top of the cheese.

Spread a thin layer of sauce on the top bun, close the burger, press gently and serve immediately.

Optional: serve with fries or a side salad and extra sauce for dipping.
