Store the bottle upright and remove from refrigeration about 20–30 minutes before serving if it has been chilled below 55°F (13°C). Austin Hope Cabernet is best served slightly below room temperature, around 60–65°F (15–18°C). If the bottle is too warm, chill it gently in the refrigerator for 15–20 minutes; avoid serving too cold as flavors will be muted.

Inspect and chill

Use a waiter’s corkscrew or sommelier knife. Cut and remove the foil just below the bottle shoulder, wipe the top of the cork with a clean cloth, insert the screw into the center of the cork, and ease the cork out slowly to avoid agitation and cork breakage.

Open the bottle

Pour the wine slowly into a clean decanter. For a young, robust Paso Robles Cabernet like Austin Hope, decanting for 30–60 minutes helps soften tannins and open aromas. If you don't have a decanter, pour into a large wine glass and let it sit for 20–30 minutes.

Decant (recommended)

Pour 5–6 oz (150–180 ml) into a large-bowled red wine glass, filling to about one-third to allow swirling and to concentrate aromas.

Pour

Swirl the glass gently to release aromas, inhale to identify fruit, oak, and spice notes. Taste and let the wine breathe further if it seems tightly wound; return any remaining wine to the decanter between pours to maintain aeration.

Taste and adjust

Bring cheeses and charcuterie to room temperature: remove from refrigerator 20–30 minutes before serving to allow flavors to bloom.

Arrange: Place sliced cheese, charcuterie, and bread on a small board or plate. Offer crackers if desired.

Pairing notes: Creamy, aged cheddar or nutty hard cheeses and cured meats pair well with the bold fruit, cocoa and tannic structure of Austin Hope Cabernet Sauvignon. Starchy bread or crackers help cleanse the palate between sips.
