Quick-soak dried chickpeas

Rinse 2 cups dried chickpeas under cold water, removing any debris. Place them in a heatproof bowl and pour 4 cups boiling water over them. Cover and let soak for 1 hour to rehydrate quickly. (If you prefer an overnight soak, cover with 3–4 inches of cold water and refrigerate 8–12 hours; adjust later steps by draining and using fresh water.)

Prepare tea infusion

After the quick soak, drain and rinse the chickpeas. In a medium saucepan, bring 6 cups fresh water to a simmer. Add 2 tea bags (or 2 tablespoons loose tea in a tea infuser), 1 bay leaf, and 8 whole black peppercorns. Simmer the tea infusion for 5 minutes to release flavor, then remove from heat.

Add the drained chickpeas to the warm tea infusion, cover, and return to a gentle simmer. Cook, partially covered, until chickpeas are tender but not falling apart, about 45–60 minutes. Start checking for doneness at 40 minutes. Skim any foam occasionally. If water level drops below the chickpeas, add up to 1 cup more hot water as needed to keep them submerged.

When chickpeas are cooked through and tender, remove the pot from heat and discard the tea bags, bay leaf, and peppercorns by straining the cooking liquid (reserve liquid if you want to use as broth). Drain chickpeas and set aside 1/4 cup of the cooking liquid for later if you plan to mash or make a saucier finish.

Sauté aromatics

While chickpeas simmer, heat 2 tablespoons olive oil in a large skillet over medium heat. Add 1 cup finely chopped yellow onion and sauté until translucent and beginning to brown at the edges, 6–8 minutes. Add 3 minced garlic cloves and cook until fragrant, about 30–45 seconds.

Toast spices

Stir in 1 teaspoon ground cumin, 1 teaspoon ground coriander, and 1 teaspoon smoked paprika. Cook, stirring constantly, for 30–60 seconds to toast the spices and bloom their oils. This helps deepen flavor.

Combine chickpeas and aromatics

Add the drained, tea-steeped chickpeas to the skillet with the aromatics and spices. Toss to coat and cook together over medium heat for 4–6 minutes so the chickpeas absorb the spiced aromatics. If the pan seems dry, add up to 2 tablespoons of the reserved cooking liquid (or water).

Season the chickpeas with 1.5 teaspoons kosher salt and 1/2 teaspoon freshly ground black pepper. Stir in 2 tablespoons fresh lemon juice and 2 tablespoons chopped fresh parsley. Cook another 1–2 minutes to marry flavors. Taste and adjust seasoning: add more salt, lemon, or a splash of the reserved cooking liquid if you prefer a looser texture.

Finishing (optional toppings)

Transfer chickpeas to a serving bowl or plate. Drizzle with 1 teaspoon extra-virgin olive oil, sprinkle 1 teaspoon toasted sesame seeds and 1/4 teaspoon crushed red pepper flakes if desired. Garnish with additional chopped parsley or a lemon wedge.

Serve warm as a side dish, salad topping, or spooned over grains or greens. Leftovers keep refrigerated in an airtight container for up to 4 days. Reheat gently with a splash of reserved cooking liquid or water to loosen.
