Twister Base

Method

Raspberry & Ginger Purée

Cook and blend purée

Combine raspberries, chopped ginger, sugar, and 2 tablespoons water in a small saucepan. Bring to a gentle simmer over medium heat and cook 3–4 minutes, stirring occasionally, until raspberries break down and sugar dissolves. Remove from heat and let cool 5 minutes.

Fine-strain

Transfer the cooked mixture to a blender and pulse once or twice to fully break down solids, or mash with a fork if preferred. Pour the mixture through a fine-mesh strainer into a bowl, using the back of a spoon to press out about 3/4 cup purée. Discard seeds/solids. Chill or set aside to cool completely.

Twister Base & Muddling

In a sturdy cocktail shaker or large jar, add the fresh mint leaves and the fresh lime juice. Gently muddle (press and twist) the mint with a muddler or the back of a spoon about 6–8 times to release the oils; avoid tearing the leaves into tiny pieces.

Add the pineapple juice and cold water to the shaker with the muddled mint and lime juice. Add 1 cup of ice (from the measured ice amount) and secure the lid.

Shake vigorously for 10–12 seconds until the outside of the shaker feels chilled (this chills and lightly dilutes the mixture).

Assemble & Serve

Fill two tall glasses with the remaining ice, about 1 cup per glass (adjust to preference). Strain the shaken pineapple–lime–mint mixture evenly into the two glasses, pouring over the ice and filling each glass about two-thirds full.

Spoon or gently pour 2–3 tablespoons of the raspberry & ginger purée over the top of each glass so it creates a layered swirl (the purée will sink and twist through the pineapple mixture). If you prefer a lighter swirl, stir once gently with a straw to create a twister effect.

Top each glass with about 2 tablespoons (1 ounce) of sparkling water if you want effervescence, leaving a small gap at the top. Gently tuck 4–5 fresh mint leaves and a lime slice onto each glass as garnish.

Serve immediately with a straw and a small spoon so guests can swirl more purée through the drink as they like.
