Prepare glass

Select a highball or large wine glass. Fill the glass with crushed or cubed ice to chill.

Muddle ginger

Place the thinly sliced fresh ginger in the glass (or a mixing glass) and gently muddle once or twice to release aromatic oils. Do not over-muddle to avoid excessive bitterness.

Add gin and lime

Pour 2 oz London dry gin and 0.5 oz fresh lime juice over the muddled ginger and ice.

Top with tonic

Slowly pour 4 oz chilled tonic water down the side of the glass to preserve carbonation and create a gentle sparkle.

Stir gently

Use a long bar spoon to gently roll the drink once or twice (about 3–4 rotations) to integrate the gin, lime and tonic without flattening the bubbles.

Garnish and serve

Garnish with a lime wheel or wedge placed on the rim and a thin ginger slice floated on top. Serve immediately with a straw if desired.

Optional Ginger Cordial

Make cordial: Combine 1 oz chopped fresh ginger, 1/4 cup water and 2 tbsp sugar in a small saucepan. Bring to a simmer over medium-low heat, stirring until sugar dissolves. Simmer gently 4–5 minutes to extract flavor.

Finish cordial: Remove from heat, add 1/4 tsp lime zest if using, allow to cool 10–15 minutes, then strain into a jar. Refrigerate. Use 1/4–1/2 tsp cordial in place of or in addition to muddled ginger for a stronger, smooth ginger note.
