Preheat and prepare pan

Preheat oven to 350°F (175°C). Lightly grease an 8x8-inch square pan (or two 8x4-inch loaf pans for individual rectangular brownies) with 1 tsp butter or neutral oil. Line the pan with parchment paper leaving a 1-inch overhang on two opposite sides to lift brownies out easily.

Melt chocolate and butter

Place chopped bittersweet chocolate and 0.75 cup butter in a heatproof bowl. Melt gently using a double boiler or microwave in 20–30 second bursts, stirring between bursts, until smooth and glossy. Remove from heat and let cool 3–5 minutes.

Combine sugars and eggs

Stir granulated sugar and light brown sugar into the slightly cooled chocolate-butter mixture until mostly incorporated. Add the eggs one at a time, whisking briskly after each addition until fully combined and the mixture is thick and shiny. Stir in vanilla extract.

Sift dry ingredients

Sift together 0.75 cup all-purpose flour, 0.25 cup unsweetened cocoa powder, 0.5 tsp fine sea salt, and 0.5 tsp espresso powder (if using) into a bowl to remove lumps and aerate.

Fold dry into wet

Gently fold the dry mixture into the chocolate-egg mixture with a spatula until there are no visible streaks of flour. Do not overmix; stop when just combined to keep the brownie fudgy.

Add chocolate pockets

Fold in 0.25 cup mini chocolate chips or chopped chocolate to create melty pockets throughout the batter. Reserve a small sprinkle to scatter on top if desired.

Bake

Spread the batter evenly into the prepared pan, smoothing the top. Bake in the preheated 350°F (175°C) oven for 22–28 minutes for an 8x8 pan (or 18–24 minutes for smaller loaf pans). The center should still appear slightly underbaked — a toothpick inserted will come out with a few moist crumbs but not wet batter. Rotate the pan halfway through baking for even rise.

Cool

Remove brownies from oven and let cool in the pan on a wire rack for about 20 minutes. Use the parchment overhang to lift the brownie slab out of the pan and transfer to the rack to cool another 30–45 minutes for easier slicing. For fudgier texture, serve slightly warm; for cleaner slices, chill 30 minutes in the refrigerator.

Assembly & Serving (per brownie)

Slice the cooled brownie slab into two generous portions (this recipe makes one slab; double quantities to produce two slabs for '2 x Mowgli Chocolate Brownie'). Place a brownie on a dessert plate.

Dust each brownie lightly with 1 tsp powdered sugar using a fine mesh sieve, if desired.

Top with 1 scoop vanilla ice cream alongside or on top of the warm brownie. Sprinkle a tiny pinch (about 1/4 tsp) of flaky sea salt over the ice cream and brownie to heighten chocolate flavor.

Drizzle about 1 tablespoon melted dark chocolate in a thin stream over the brownie and plate for an elegant finish.

Serve immediately while warm, with extra napkins.

Make-Ahead & Storage

Store cooled brownies tightly wrapped at room temperature for up to 3 days or in the refrigerator for up to 1 week. Reheat gently in a warm oven (300°F / 150°C) for 5–8 minutes or microwave 10–20 seconds before serving with ice cream.
