Method
Prepare Dal
Soak (if needed)
Rinse 1 cup black gram (urad dal) thoroughly under cold water until water runs clear. Soak in fresh water for 4–6 hours or overnight. Drain before cooking. (If using pre-split or pressure-cooker friendly black lentils, soaking can be reduced to 1–2 hours or omitted if very soft.)
Cook dal
Place soaked and drained dal in a pressure cooker or heavy pot. Add 3 cups water, 1 tsp turmeric, 1 tsp salt and 2 tbs ghee or oil. Pressure-cook for 6–8 whistles (about 20–25 minutes total) until dal is soft and breaking apart. If using a pot, simmer, partially covered, for 45–60 minutes, stirring occasionally and adding water if needed. The cooked dal should be tender but still hold some shape for texture.
Once cooked, lightly mash some of the dal with the back of a spoon to create a creamier body but leave some whole lentils for texture. Keep warm.
Make the Aromatic Tomato Base
In a large skillet or heavy saucepan, heat 1 tbs oil and 1 tbs butter over medium heat until shimmering. Add 1 tsp cumin seeds and 1 tsp mustard seeds (if using). Let them sizzle and pop for 20–30 seconds without burning.
Add 1 cup finely chopped onion. Sauté on medium heat until onions are soft and golden, about 6–8 minutes, stirring frequently to prevent sticking.
Stir in 2 cups chopped ripe tomatoes and 1 tbs tomato paste (if using). Cook on medium-low, breaking down the tomatoes with a spoon, until the oil begins to separate from the tomato-onion mixture and it becomes saucy, about 8–12 minutes.
Spice & Combine
Lower the heat and add 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp red chili powder, 0.5 tsp garam masala and 0.5 tsp freshly ground black pepper to the tomato-onion mixture. Stir and cook 1–2 minutes to toast the spices and integrate their flavors.
Ladle about 1 cup of the hot cooked dal (including its cooking liquid) into the tomato-spice pan and stir to loosen and unify the base. This tempers the tomato mixture and prevents curdling of any dairy later.
Pour the remaining dal into the pan and stir to combine. Simmer gently on low for 8–10 minutes so flavors meld. If the dal is too thick, add up to 0.5–1 cup hot water to reach the desired consistency (traditional dahl is saucy but not watery). Adjust salt to taste.
Finish & Garnish
Stir in 0.25 cup creamy yogurt or coconut cream (optional) off the heat to add richness and smoothness. If using yogurt, first temper it by whisking with a few tablespoons of hot dal and then stirring back in to avoid splitting.
Add 1 tsp amchur powder or the juice of 1 lemon to brighten the flavors. Taste and adjust salt, spice, or acidity.
Turn off heat and stir in 0.5 cup chopped fresh cilantro. Transfer to a serving bowl and sprinkle 0.25 cup fried shallots or onion crisps on top if using.
Serve hot with lemon wedges on the side. Mowgli Black Dahl pairs well with steamed basmati rice, jeera rice, naan, or roti.
