Mango Passion Base

Prepare mango puree

If you don't have prepared mango puree, peel and chop 1 medium ripe mango and blend until smooth (about 1 cup). Strain if you prefer a smoother texture.

In a medium mixing pitcher combine 1 cup mango puree, 2 tablespoons passion fruit pulp, 1 tablespoon fresh orange juice, 1 tablespoon fresh lime juice and 1 tablespoon simple syrup. Stir thoroughly to combine. Taste and adjust sweetness with up to 1 extra teaspoon of syrup if needed.

Herb & Citrus

Gently bruise the coriander leaves with the back of a spoon or lightly clap them between your palms to release oils (do not over-muddle or they will turn bitter). Add the bruised coriander leaves and 1 lime slice to the mango mixture.

Using a muddler or the back of a spoon, lightly press the lime slice and coriander into the mango mixture 4–6 times to release fragrant oils and a touch of lime juice—avoid pulverizing the leaves.

Finish & Serve

Fill two serving glasses with ice (about 1/2 cup ice per glass). Divide the mango-coriander mixture between the glasses.

Top each glass with chilled sparkling soda, about 120 ml per glass (240 ml total). Gently stir once to integrate, lifting some of the coriander leaves through the drink for visual appeal.

Garnish each glass with the remaining lime wheel and an orange slice. If using, sprinkle the reserved passion fruit seeds (about 1 teaspoon) on top for texture and visual contrast.

Serve immediately with a straw. Optionally provide extra simple syrup on the side if guests prefer sweeter drinks.
